Homemade Marshmallows

Homemade Marshmallows - Max M Rasmussen
Video Recipe - Marshmallows are a new invention that was developed in the 50's. When making your own, you can even add any flavor and color that you want. It is also a recipe that kids love to try, so it is good to do with them. It does not take very long. This is a basic recipe. You may experiment with orange or strawberry juice instead of water, or water colored with red beets, or ....

Ingredients

  • 2 dl (200 g) (0.85 cup) water 
  • 400 g (14 oz) sugar
  • 1 vanilla pod
  • 20 leaves of gelatin (34 g (1 oz))
  • 200 g (7 oz) icing sugar 

Directions

Add the gelatin leaves to a bowl of cold water until the are soft. 5-10 minutes.

Bring the water and sugar to a boil in a saucepan.

Put the the vanilla seeds from the split vanilla pod into the water.

Let it simmer for about 20 minutes. (Until it reaches precisely 110ºC (230ºF))

Add the gelatin and stir until everything is melted.

Take it off the heat and let it cool for 10 minutes (until it reaches 100ºC (212ºF)).

Add a thick layer of icing sugar on the bottom of a roasting pan.

Whisk the marshmallow mix with a stand mixer (preferably) or hand mixer. Whisk it looong time until it is very thick. You must both whip som air into the mixture and it needs to cool down too. The bowl should feel like body temperature on the outside.

I whip it in the neighborhood of 15 minutes with my Kitchenaid at the second highest setting.

Pour the fluffy marshmallow mix into the roasting pan onto the icing sugar. Spread it out into an even layer. Approximately 2-2½ cm (1 inch) thick.

Sprinkle more icing sugar on top of the marshmallow mix.

Let it cool until room temperature.

Put it on a table.

Cut it into 4 cm (1½-2 inch) squares with a pizza wheel cutter, an oiled knife or a pair of scissors.

Notes

I have tried to make them with many different kinds of juices. Raspberry juice, orange juice, carrot juice and onion juice. I would not recommend the onion juice!

 

The original metric recipe can be multiplied with 1.25 for ingredient amounts that are a better fit for both metric and imperial measurements. But I chose not to use that, as the marshmallow mix is already a large portion that is difficult to work with even in a stand mixer. But feel free to try it instead.

  • 500 g (1.1 lbs/17.5 oz) sugar
  • 1 vanilla pod
  • 25 leaves of gelatin (42 g (1.5 oz))
  • 250 g (9 oz) icing sugar

Everybody, this is the BEST recipe on net, i tried at least 5 recipes , they all failed , this is the only one that succeeded , the texture is perfect , it sets in minimal time ,...its perfect, thank you KVALIFFOD

Thank you. I never just copy other peoples recipes, but always make them repeatedly until I understand how to get them right every time. So I don't post recipes that often, but they are always as thorough as possible.

Excellent!

Tried this, and it worked pretty much exactly as described. Except the stuff was even more sticky than expected, getting an even spread was very difficult. Fortunately that doesn't make much difference for the final product, which was excellent. Thanks!
