Sauce Remoulade

This is the classic remoulade from Escoffier. It is like a cold version of a bernaise. It is a great herbal mayonnaise sauce. Usable as a condiment or dipping sauce for raw vegetables, french fries, bread etc.

Ingredients small portion

  • 3-4 dl (1½ cup) mayonnaise
  • 1 tsp tbsp mustard
  • 35 g (1 oz) chopped cucumbers (like pickles)
  • 15 g (½ oz) capers, chopped
  • 1 tsp parsley, chopped
  • 1 tsp chervil, chopped
  • 1 tsp tarragon, chopped
  • ½ tsp Asian fish sauce

Ingredients

  • 1 liter/quart mayonnaise
  • 1 ½ tbsp mustard
  • 100 g (3.5 oz) chopped cucumbers (like pickles)
  • 50 g (1½ oz) capers, chopped
  • 1 tbsp parsley, chopped
  • 1 tbsp parsley, chopped
  • 1 tbsp tarragon, chopped
  • ½ tbsp Asian fish sauce

Method

Mix it all together.

Serve cold.
